Vegan Tofu and Vegetable Pot Pie
Serves 2

Crust
1 cup + 2 tablespoons all-purpose flour
1 stick or 1/2 cup frozen Earth Balance Vegan Buttery Sticks
Ice water

Filling
8 ounces super or extra firm tofu
3 tablespoons olive oil, divided
1 small yellow onion, diced
1 celery rib, diced
1 carrot, diced
2 cloves garlic, crushed
1 Russet potato, diced
1/4 cup all-purpose flour
2 teaspoons nutritional yeast
2 tablespoons soy sauce
1 1/4 cups vegetable broth
1/2 cup fresh or frozen peas
1 teaspoon finely chopped sage
1 teaspoon thyme leaves
Salt and pepper

Special Equipment
2 (12-ounce) ramekins or other oven-safe dishes

For the Crust (Part 1)

The secret to this crust is chilling the ingredients and tools. Place the flour in a mixing bowl and chill in the freezer while you are preparing the filling. Also place a pastry blender or fork in the freezer.

For the Filling

Preheat oven to 400° F.

Cut tofu into 1/3-inch dice and press between clean kitchen towels or paper towels to rid of excess water.

Heat 1 tablespoon of olive oil in a large skillet over medium heat and cook tofu until golden on all, or most, sides. Remove tofu from skillet and set aside.

Heat remaining 2 tablespoons of olive oil in the same skillet. Add onion, celery, carrot, and garlic and sauté until onion is translucent.

Add potato to the skillet and cook, stirring frequently, until tender but not mushy.

Add flour, nutritional yeast, and soy sauce to the skillet and stir into the vegetables.

Add vegetable broth and stir until combined, scraping all the browned bits from the bottom of the pan.

Add tofu, peas, sage, and thyme and stir until combined.

Remove from heat and season to taste with salt and pepper.

For the Crust (Part 2)

Take the supplies out of the freezer.

Cut the Earth Balance into smaller cubes or slices and add to the flour. Using a pastry blender or fork, cut the mixture until it resembles coarse meal. Then, using your hands, quickly rub the mixture together so that the Earth Balance is absorbed into the flour.

Gradually drizzle ice water into the bowl, mixing with the pastry blender or fork until the dough just comes together.

Quickly shape the dough into a ball and flatten into a disk. Place on a floured surface a roll out to 1/8 inch thick.

Place the ramekins upside-down over the dough and use a paring knife to cut out circles about 1/2 inch larger on all sides.

Assemble and Bake

Divide the tofu and vegetable mixture between the ramekins.

Place a dough round over each ramekin and tuck the sides under to form a thicker crust around the edge. Press to seal around the edges of the dishes and crimp with a fork. Cut a slit in the middle.

Bake in the oven until golden and bubbly, about 30 minutes.

Let sit for about 5 minutes before serving.

I’m starting to think I should try making pot pie. Nicholas keeps trying to convince me it can be delicious…

Enthusiastic Consent has Sex and Cookies written all over it. Why don’t we learn how to negotiate and talk about sex so that we can all give enthusiastic consent rather than mixed signals?

Because of those dynamics, the scenario for a young couple newly interested in each other might go like this:

Sam: You want to come over and watch a movie tomorrow? (and hopefully have sex with me)
Alex: Sure, I’d love to see Harry Potter. (I really want to watch Harry Potter and maybe cuddle, I like Sam a lot)

Later that night:

Sam: (makes a move)
Alex: (Um? What?) Ok, I guess.
Sam: (Yay! Wait, do I have protection? I think Alex has some?)
Alex: (Gah, I don’t have protection maybe I’ll just do oral because I don’t want to have intercourse yet)
Sam: (Alex likes ORAL!)

Do you ever feel like yelling at everyone that makes you feel a little bit down at some point? I feel this way once in a blue moon. When I’m off my lexpro medication I just want to write a letter to everyone who makes me crazy and makes me just…..yea you know. I think I have the best friends then something shitty happens and I don’t know why I stay around them. Especially when they think they are the best then when you need to vent or just talk they go POW right in the kisser.

I’m tried of being the one in the group that is the mommy and goes ” oh honey I understand and maybe next time you just need to rethink.” or “No it’s not your fault he is a jerk”. Well here is the truth grow up, stop being a walking contradiction……..I mean come on how confused are you to know you are an amazing person and can do anything which you proved yet let a stupid ass messed up idot walk all over you and then get the balls to compare my wonderful relationship with my fiancee to you messed up 2 min time frame……REALLY. I’m done caring. I don’t want someone who acts like a baby to stand by my side at my wedding. When we do everything for you all the time and you can’t even give me the time a day when I really need someone. NO. And then when I’m feeling kinda bad about not having you around for my special day someone reminds me about things you do.

I mean come on you wanted me to be a bridzilla, let alone I’m by myself at school and needed my friend to go with me for dress shopping and all you can say is ” please don’t make me go, I don’t want to go again!!!” All you want to do is play dress up in life and be the center of attention and I can’t deal with it.

Also how is it I get stuck with a father in law that thinks I’m not good enough for your son. After 5 freakin years you think you would get it right. I love him and you need to get over it. And stop calling you grandkids stupid and be there for them. You raised your oldest daughter to be a brat and tells her children there stupid all the time and wont do anything real with their lives. I love these kids and all I hear is this crap. They are good amazing people and you are a ITCH!!!!!!!!!! I know I freak out and you have never seen me and I’ve never told you off in any way. But you know you go up and down with me and you still can just deal with the fact.

Still I have exams in the morning and the dog ate my good eye glasses I needed to read my Fing exam………. Yes this is why people should go to bed and not freak out…..

also take your medication so you don’t freak out at 2 am in the morning….ok future self..
